How to Bake a Strawberry Cake

Although decadent enough to be served as a dessert in their own right, strawberries can also be used to add mouth-watering flavour to baked treats too! Whether you have a fridge full of fresh strawberries or a freezer full of frozen strawberries, we have the perfect way for you to add that delicious fruit to a baked treat that the whole family will love: a strawberry cake. See below to find out more.

Cake Ingredients:

  • 288g of Sifted Flour
  • ¼ tsp of Salt
  • 2 ½ tsp of Baking Powder
  • 113g of Butter
  • 300g of Sugar
  • 2 Large Eggs
  • 160g of Crushed Strawberries

Strawberry Glaze Ingredients:

  • 160g of Crushed Strawberries
  • 128g of Caster Sugar
  • 28g of Butter
  • ½ tsp of Vanilla Extract

METHOD: Simply Sublime Strawberry Cake: Serves 16

  1. Preheat your oven to 180°C (160°C fan or gas mark 4), ready to bake.
  2. Sift together the flour, salt and baking powder, into a bowl. Note: use a fine sieve to make sure that there are no lumps!
  3. Combine the sugar, butter, eggs and vanilla extract in a separate bowl, and beat the mixture for 2 or 3 minutes. Keep scraping the sides of the bowl as you go along, ensuring that everything is evenly and thoroughly mixed.
  4. Add the dry mixture to the wet mixture, intermittently adding spoonfuls of crushed strawberries, and beat for another 2 or 3 minutes.
  5. Once mixed, pour this batter into two 8” round cake tins. You can use non-stick tins, or grease and flour other tins before use.
  6. It’s time to bake it! Place your filled cake tins into the preheated oven for around 25 - 30 minutes, or until your cake passes the toothpick test. You can check to see if further baking is required by sticking a clean toothpick into the centre of the sponge. If it comes out clean, your cake is ready. If it comes out coated in residue, then a little more time in the oven is required.
  7. Once baked, remove the cakes from their tins, and leave them on a wire rack to cool.
  8. Now it’s time to create the strawberry glaze! While your cakes are cooling, combine the caster sugar, butter and vanilla extract using a fork, until they are evenly mixed. Add the strawberries, one spoonful at a time, to thin the mixture to the perfect consistency.
  9. Once the cakes are cool, cover them in the delicious strawberry glaze. Pour the glaze over your sponge and spread using a spreading knife or the back of a tablespoon, before it sets.
  10. Now it’s time to serve up your delicious strawberry cake – slice it up, portion it out, and serve alongside fresh strawberries, ice cream, or simply as it is. Enjoy!
